Ingredients
1LBS Ground Beef
1Large Onion, Chopped
1Large Bell Pepper, Chopped
1 Tablespoon Taco Seasoning
1Tablespoon Onion Powder
1Tablespoon Garlic Powder
1(7oz Can) Diced Green Chili, Drained
1(15.25 oz Can) Black Beans, Drained
1Cup Cheese
1Cup Salsa
1(10.75 oz Can) Cheddar Cheese Soup
1cup Milk
8Corn Tortilla
Cooking Instructions:
Preheat oven to 425 degrees
In a large bowl combine Taco Seasoning, Onion Powder, Garlic Powder, Drained Green Chili, and Black Beans. Plus Cheese, Cheese soup, Milk, Salsa, and Corn Tortilla.
Chop onion, and bell pepper and begin sauteing the onion, about 5 minutes where it’s just barely beginning to lose some of its color. Then give the bell peppers a few moments to saute, before adding these ingredients to a large bowl. Brown Meat, drain fat, and add to the bowl. Mix well and add the mix to a 9x13 pan, sprayed to keep the food from sticking and then put into the oven for 10 minutes or until bubbling.

Remove the Tortilla to bring the carbohydrate to 14.6
Tip: Serve with a green salad and you’ve got a full meal. You can switch out the Milk for a cup of Enchilada sauce.
For Left over: Can be storage in the refrigerator for at least a week, and in the freezer for 6 months. You can then pull it out and turn it into leftover Mexican soup by adding a can of Tomato Soup, or even a can of enchilada sauce.
For Single People: You can invite a few of your friends, or family members or package and freeze for other meals, remember to do it in the portion size that fits you.
